Getting the fire going
A fire needs lots of oxygen to get established. Light the fire in the mouth of the oven. Once it is well established, push the fire back into the oven. It will take you a bit of time to become competent at reading the ovens temperature but with a little practice you will know your ovens temperature as well as you know your baths water temp.
Invest in a set of welding gloves because this makes turning the dishes somewhat safer. I melted the nylon kitchen mits on my first night.
Cooking
You will be limited by your cooking possibilities only by your imagination.
Get to know your oven. Experiment.
This oven will make your cooking famous, because the food doesnt taste like its from a conventional oven.
Use the oven floor instead of tins to finish cooking your breads and pizzas.
Hard Yards Ovens have a Chimney, so theres no need to remove the fire before you start cooking. Be amazed at how little firewood is needed to cook up a storm for 15 people. Ideally we light the oven two hours before we want to cook.
After lighting the fire with kindling, we add pieces no thicker than my thumb until the fire is roaring along and then we add a few pieces about 5cm square.
When the kindling is well alight, we put the door back on the oven and only open it to add the odd piece of firewood.
When the ovens been going for 90 minutes or so, we push the fire to the back of the oven and leave the door off while we're cooking.

Important - To 'season' the oven, start with a small fire inside rear of oven & slowly build heat over a day. This will extract any excess moisture - failure to follow this procedure will result in cracking. |
Adobe Finish
- Mix cement/sand - 1:4 ratio (make it reasonably wet)
- Splatter over surface - this creates a 'key' for mortar mix later - allow to dry
- Trowel on second coat (drier mix) entirely covering oven, trowel off excess - allow to dry
- A final coat can now be applied, choose a coloured oxide - add to mortar mix 4:1 apply with trowel, dab with thick sponge to achieve desired texture.
